Super Easy White Bean Salad
Hello! This is a recipe for a really super easy white bean salad, inspired by similar recipes from the Mediterranean Diet. As I’m focusing on more anti-inflammatory foods, I thought this would be a good recipe to share. We had this as a side with chicken schnitzel and spicy wedges the other night. So good.
Ingredients/What You Will Need
- 1 can cannellini beans (we used ready to eat ones from Coles)
- 1/2 cucumber (diced)
- 1/2 red onion (diced)
- 10 – 15 cherry tomatoes
- Handful of parsley
- Handful of mint
- Salt and Pepper
- Lemon Juice (either 1/2 lemon or just lemon juice in general)
- 1 tbsp olive oil
- Optional: 100 g feta cheese (diced)
- Also Optional: Spices
Method
- Drain and wash the beans thoroughly. Roughly dice cucumber and red onion and add to a bowl.
- Halve the cherry tomatoes (or quarter if they are big) and add.
- Chop parsley and mint roughly. Add these to a bowl. Season with salt and pepper and add the olive oil and lemon juice.
- At this point, you can add spices if desired and give the salad a toss.
- Top with the feta. Give a quick stir and serve immediately.
