Super Easy White Bean Salad

Hello! This is a recipe for a really super easy white bean salad, inspired by similar recipes from the Mediterranean Diet. As I’m focusing on more anti-inflammatory foods, I thought this would be a good recipe to share. We had this as a side with chicken schnitzel and spicy wedges the other night. So good.

Ingredients/What You Will Need

  • 1 can cannellini beans (we used ready to eat ones from Coles)
  • 1/2 cucumber (diced)
  • 1/2 red onion (diced)
  • 10 – 15 cherry tomatoes
  • Handful of parsley
  • Handful of mint
  • Salt and Pepper
  • Lemon Juice (either 1/2 lemon or just lemon juice in general)
  • 1 tbsp olive oil
  • Optional: 100 g feta cheese (diced)
  • Also Optional: Spices

Method

  1. Drain and wash the beans thoroughly. Roughly dice cucumber and red onion and add to a bowl.
  2. Halve the cherry tomatoes (or quarter if they are big) and add.
  3. Chop parsley and mint roughly. Add these to a bowl. Season with salt and pepper and add the olive oil and lemon juice.
  4. At this point, you can add spices if desired and give the salad a toss.
  5. Top with the feta. Give a quick stir and serve immediately.
