Delicious Strawberry Ice Cream with Fresh Fruit Recipe

Hello! This is my recipe for homemade strawberry ice cream (made with an ice cream churner). I’ve been REALLY missing real-fruit ice cream that NZ has everywhere, so this really helped with that craving. Enjoy!

Makes around 2 L of ice cream (or just under) & contains dairy/lactose

Prep Time: Around 1 hour (+ 12 hours for ice cream bowl)

Ingredients/What You Will Need

  • Ice Cream Maker (put your bowl in the freezer over night if required)
  • Blender of some kind (I use a nutri-bullet)
  • 1 x metal bowl and 1 x metal whisk (chilled in fridge for 10 – 20 minutes prior to making)
  • 1 x air tight container
  • 1 x punnet fresh strawberries (+ a few more for finishing touches)
  • 1 cup caster sugar (halved)
  • 600 mL of thickened cream (heavy cream)
  • 1 cup of milk (I usually use skim)
  • 2 tsp vanilla
  • Pinch of salt
  • Pink/red food colouring (optional) – I used x 1 tsp of pink food colouring

Method

  1. Chop up your strawberries and pour half a cup of caster sugar over them, leave for about 10 – 15 minutes (this helps release the strawberry flavour)
  2. Blend strawberry mixture in a blender (I did about 2 blitzes in my nutribullet)
  3. Whisk in a bowl cream, the rest of the sugar, milk, vanilla, and then add in strawberries that are blended
  4. Add in salt and food colouring, mix until desired colour
  5. Add mixture to ice cream maker and churn for about 30 minutes
  6. While ice cream is churning, chop up a few extra strawberries to small pieces and add to the churner 5 minutes before ending so that you have strawberry pieces in your ice cream
  7. Transfer the mixture to an airtight container and freeze for about 5 hours (or if you want soft serve, serve immediately)
  8. Enjoy!

Pro Tip: You can also use balsamic vinegar or lemon juice to bring out the strawberry flavour.
