Delicious Apple Cinnamon Muffins Recipe
Hello! For a few months now, I’ve been wanting to bake apple and cinnamon muffins to have as a snack throughout the day or just as an alternative breakfast option and I finally did that the other day. Hope you enjoy this recipe!
This recipe contains dairy and gluten FYI.
Makes about 12 – 15 muffins
Ingredients/What You Will Need
- 15-hole muffin tin
- Muffin Paper Cases
- Sieve
- Ice cream scoop/Spoon
- 2 Granny Smith Apples (peeled, decored, and diced)
- 1/2 cup of butter (melted)
- 1 cup brown sugar
- 1/2 cup milk (I use skim)
- 2 eggs
- A drop of white vinegar
- 2 and 1/2 cups of plain flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp all spice
- Pinch of salt
Method
- Preheat oven to 200 C (or 180 C fan forced).
- Line a 15 hole standard muffin tin with paper cases. Set aside.
- Whisk butter and brown sugar in a bowl. Then add milk, eggs, and vinegar. Combine.
- Sieve flour over batter mixture, then add in baking soda, cinnamon, allspice, and salt (do not overmix).
- Stir through apple chunks.
- Scoop batter into muffin cases (about 3/4 full) using an ice cream scoop or spoon.
- Place muffins in oven. Bake for 18 minutes or until a toothpick/fork comes out clean.
- Leave to cool in muffin tray for 5 minutes.
- Once cool, store in an airtight container. Muffins should last 3 – 5 days
