Ingredients/What You Will Need

  • 1 x 8×8 inch baking pan
  • Baking paper
  • Al foil
  • Medium bowl
  • Large bowl
  • Whisk
  • Spatula/wooden spoon
  • 1 & 3/4 cup plain flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup brown sugar (packed)
  • 2 eggs
  • 1/2 cup of butter (melted)
  • 2 tsp of vanilla
  • 1 cup of chocolate chips (I used a mixture of white, dark, and milk choc chips but you can really add in anything you want). M&M’s or Maltesers would also work here!

Method

  1. Preheat oven to 180 degrees Celsius OR 350 Fahrenheit.
  2. Line baking tray with al foil and baking paper, let some fall over the edge for easy-lifting once baked.
  3. In your medium bowl (I accidentally did this the wrong way round), sift in flour, baking soda, baking powder, and salt. Set aside.
  4. In your large bowl, whisk together melted butter and brown sugar. Add in 2 eggs and vanilla. Whisk until thick.
  5. Add the dry mixture to the wet mixture, and stir together until almost combined.
  6. Add in 1 cup of chocolate chips/other ingredients and stir (it’s better to have blondies under mixed than over mixed).
  7. Transfer mixture into baking pan with a spatula.
  8. Bake for 33 minutes or until a fork/toothpick comes out clean.
  9. Enjoy!

Serving Suggestion: Pair a warm Blondie with Vanilla Ice Cream for a decadent dessert.

Luke said these tasted like a cookie bar and so that’s totally what they’re meant to come out as yay!
